Unstable & poor quality Twitch stream. I'm at a loss... please help!

I'm experiencing an unstable & poor quality Twitch stream despite multiple upgrades to hardware & ISP. I'm at a loss at this point & would welcome input from people more tech savvy than I. I play The Division 2, which is an online multiplayer 3rd person shooter.

In October, I started streaming directly from the Twitch app on my Xbox One S. At the time, I had Comcast/Xfinity & was using my 2018 flashed Linksys WRT1900ACS router. I would get 50-75mb down & a consistent 5.9mb up via 2.4Ghz Wi-Fi (my modem/router are on 1st floor, console is on 2nd floor).

I was able to stream pretty consistently at 720p/30fps but increasingly experienced moments where my screen would become pixelated, specifically when my character was moving or the camera angle changed. Here is one of my early streams: https://www.twitch.tv/videos/794690089

I ended up getting the Xbox Series X (unrelated) but experienced the same issues. I thought the problem might be my router, so I got the ASUS AX5400 Dual Band Mesh WiFi 6 Gaming Router. I was getting 150-200mb down & 5.9mb up via 5Ghz Wi-Fi. But despite the new console & router, my pixelation issues at 720p/30fps were way worse: https://www.twitch.tv/videos/820203919

On Thursday, I changed ISP to CenturyLink fiber gigabit. I was expecting them to use a modem/router combo but I appear to have a Calix modem (black box directly connected to the fiber cable) & a Greenwave C4000XG router. I wanted to use my own router with their modem but couldn't figure it out.

I am now using a wired Ethernet connection (CAT-6) from the Greenwave router to my Xbox Series X. I am getting 900mb-1gig down & 500-900mb up, which I thought would be more than enough to stream consistently at 720 or 1080p.

When I try to stream at 1080p, my stream doesn't show up & Twitch says the stream is "Unstable." I tried both 5,000 bitrate & 3,500 bitrate but neither worked. Twitch Inspector says: "Audio/Video configuration issues detected. Address the following to optimize your stream's viewing experience: The stream is unstable. Please check your network connection."

I have no idea what to do at this point & am feeling really discouraged. I thought for sure that wired fiber gigabit Internet would solve my issues but it hasn't. I am not super tech savvy, so any input or problem-solving would be appreciated. Cross-posting to r/techsupport. Thank you!

Miscellaneous info: Using Razer Kiyo webcam hooked up via USB to Xbox. Using IPv4, open NAT.
