I have a few questions about OBS and Mac

Okay, so thats my streaming set up at the current moment, and here are my questions:

1) Is this capable of streaming in 1080p 60fps? If not that, how about 720p 60fps? 2) When I first started streaming 3 months ago in September, I was doing 720p 60fps just fine, but now, all of a sudden OBS uses between 100-200% of my CPU(in activity monitor, in obs it says 17% percent), and for me to run anything smoothly, I have to disable the OBS preview and drop it down to 720p 30fps. Is there any explanation for this? Anyway I can fix it? I do want to do 60fps for the most part. 3) OBS keeps resetting all of my profiles and I have to readjust everything from the display capture for my elgato, to the chroma key settings and crop settings for my webcam, any fix for this at all? Why won't my settings stay the same? 4) Why can't I use the NVEC encoder, or my nvidia graphics card? My only option in obs settings is the x264 encoder. If I change from simple to advanced I get two more settings though which are, Apple VT H264 Encoder(Hardware), and Apple VT H264 Encoder(Software). Would either of these be better to use then the simple modes x264? 5) Why would I ever change the audio bitrate, and could my system benefit from changing it? 6) Which downscaling filter is the best one to use? Bicubic, Bilinear, or Lanczos? What are the differences?

I've researched as much as I can about all this stuff, but when it comes to OBS combined with Mac, theres never a lot to go on. Just a ton of info on Windows and Mac. I understand it's a terrible combo together, but it's all I have to work with. If anyone could help me out I'd appreciate it! Thanks a bunch!
