Amateur streamer here. My streams have only just begun to really get off the ground, so I have a pretty limited knowledge of what I'm doing. Just enough to get me in trouble.
I use an Elgato Game Capture HD to capture gameplay. This has worked moderately well when I want to broadcast retro consoles, and even streams with an Xbox 360 seem to run well at a nice resolution and medium bitrate (~2000 kbps).
Problems pop up when I'm using this setup and an Xbox One, however. The stream looks nice enough in spurts, but tends to stutter or lag at irregular intervals. Invariably, usually after 30 minutes to an hour, OBS' video feed will eventually just lock up while the audio continues. Sometimes OBS will recover with a "high CPU usage" warning, but not always, and almost never will OBS report dropped frames in real time. Also worth noting: This occurs no matter what preset I'm streaming with. Veryfast, Superfast, Ultrafast -- I always run into this same problem.
These problems seem unique to the Xbox One with OBS in my setup (though, I haven't tried a PS4 or Wii U). I've tried looking up whether others have similar issues, but routinely come up with little to no actual guidance or useful advice.
So, with all that in mind, I come to you to seek out answers directly. I've considered purchasing a new capture card and am in the process of building a new PC. But neither of these are smoking-gun-solutions to whatever the actual issue might be.
One related sidenote: The frustration of having so little success with the Xbox One motivated me to try downscaling to a sub-720p resolution. This seems to help the picture quality from being too pixelated during high-motion scenes, but the stability is still a recurring problem. Plus, I have to get over the insecurity of, well, streaming at 480p or what have you.
