Weather you think it looks better set on max resolution, always set your native output to match the games resolution. If you are playing a 360 game, set output to 720-1080p. If you are playing a Xbox one game set output to 1080p. Anything SS/SX enhanced set to 1440p or 4K if it's higher than 1080p output.
Why? Cause your Xbox is stretching that resolution and it is causing the image to look like smeared Vaseline. If you output the image at native and let your tv take care of it the image will look more clear and sharper. This doesn't come without downsides. HDR is disabled and having to do this manually sucks Everytime you play a game but it does make older games look better if you do it this way. RE engine looked awful being scaled but at native it's much cleaner and don't look like a VCR. If you're skeptical then try it out.
