HELP! Xbox One S Flickering Screen and Can't change resolution!

Okay so it's a bit of a long story, basically, I have my xbox hooked up to a projector through an hdmi cable that runs throughout the walls. I turned on my xbox one day to discover it was very much on but there was nothing showing up. Eventually, after trying many things like a hard boot I discovered it was the cable's fault. I plugged the xbox into a separate tv with a different hdmi cable and it turned on but with the 640 x 480 res since i tried a reset of display settings once in the process of figuring out it was the hdmi cable. Anyway I try for a temporary solution to have my xbox on a stand near the projector (on the ceiling) and I plugged the xbox into the projector directly with the new hdmi cable. I turned it on to be greated by the normal green xbox one opening but with the low res, normal right? So i get into the xbox and go to settings and try to change the resolution back to 1080p, but when I click "640 x 480" to open the drop-down menu I see 720 and 1080 as options for a split second before the screen goes black. It stays black until I press the xbox button on the controller, at which point another minute will pass and then I will see the home screen of the xbox (not even the settings screen anymore). I've tried numerous things such as hard boots, unpluging etc but nothing seems to work and I've noticed that sometimes the screen will flash off for a couple seconds even without me pressing the resoultion button but it will happen every time i press the res button.

Hope I was specific enought, let me know if i need to clarify something for you.
