Cutting the cord, need advice

I live in semi-rural FL where we won't see YoutubeTV for a while. Tired of the Cox BS. Sling TV seems like the way to go. I don't care about DVR and the Orange lineup plus the Outdoor and the World Fishing Channel in their Heartland Extra would work just fine for me. I don't think any other service can match that at $25. One stream should be all right, too.

My main concern is the quality of video and audio. I get that Chromecast and maybe even Xbox One will not give me the experience Roku does, so I plan on getting the free stick from them and maybe buying a Premiere +. BUT apparently the videos are limited to 720p/30fps? Only stereo for audio? Is that true? How does this compare to DTV Now, PS Vue, Hulu LiveTV? Those are more expensive services for the channels I want but if the video and audio quality is substantially better, I'll go for it. Thanks!
