New rig or upgrade?

Whats up everyone! So I need a second or fifty opinion's on if I should get a new pc. Mainly for video editing/streaming/recording as if its build for this is can game at 1080p 60 fps at max setting no problem. As it stands now my cpu seems to be the bottle neck and upgrading that would require an entire rebuild (cpu, mobo, ram, cooler)

Here is my current build:

Part Info
Case CoolerMaster HAF-X
CPU Intel i7 4820k (overclocked to 4.6 Ghz)
Mobo Asus Rampage IV Black Edition
RAM 8 GB Corsair Vengence-1866 (Upgrading this 16gb regardless)
GPU 2x Asus DCO2 GTX 780
HDD 120GB Samsung 850 for boot, 500GB, 1.5 TB for storage
Cooler Corsair H100 (I think, had it before this build, shes old but good)

This rig has been getting it done for almost 3 years. Always maxed or close to max settings. But this upgrade isn't for pc gaming so much as it is for streaming/recording video. Otherwise I'd just get new a card. My current rig can record at 1080p60 from my xbox one no problem and it can stream 720p60 flawlessly or 1080p60 ok.

The problem I'm running into is streaming at 720p60 at high quality and recording 1080p60 in x264 at highest bitrate.

This is what I think I'm going to upgrade to:

Part Info Price
Case HAF-X or Corsair 900D $0 vs $350
CPU i7 6850k 3.6 Ghz or i7 6900k 3.2 Ghz $600 vs $1000
Mobo Asus Rampage V 10 $550-$600
RAM Corsair Vengeance 64GB-3200 $400
GPU Keep 780's or Asus Strix 1080 $680
HDD 1TB Samsung 850 pro for boot, 4TB HDD for storage $500 combined

If there are part that are better for around $3000 please let me know. or which CPU would benefit me. Money isn't my worry I just need it to get it done.
