Ready to pull my hair out over OBS

I know we get a lot of threads asking for help with OBS and I'm having a problem that no matter what I do or what changes I make, it doesn't seem to fix my problem and I'm so desperate for help, I'm posting here hoping someone has a solution.

I want to record using OBS and recently did a collab with some friends playing the online cards against humanity. Everything looked amazing in the stream preview, so I thought I was in the clear, but when I went to edit the footage, you can't even read the words on the cards and it's incredibly blurry.

I'm super new to using OBS, so some friends have been trying to help me fix this issue.

So far I have:

  • Unchecked the box marked Use CBR
  • Changed my max bitrate from 3000 to 2500
  • Changed quality balance from 8 to 10
  • Changed to export my file from .FLV to .MP4
  • Changed the resolution trying 1080p and 720p and my computer's settings of 1366 by 768
  • Tried resolution downscale
  • Changed the x264 CPU preset from very fast to faster and then to medium

None of these have made difference, it's still blurry when I go to edit.

I'm starting to think maybe my PC can't handle OBS. I don't understand capture specs very well and I usually use a game capture kit to record my videos from Xbox One, but I really want to collab with friends playing games on Steam and browser games.

If anyone could help me, that would mean the world. I'm also willing to purchase other game capture programs or kits if there's something out there that will work easier for me.

Thank you!
