Is there any reason as to why both the Youtube app and YT videos through the IE app are limited to 720?

I can 100% understand not having 60fps, but why don't they have 1080p? And before this gets flooded and downvoted because one person comments "it's because of your internet!", it is not because of my internet. I have my Xbox connected straight up. My laptop on wireless can play +1080p and 60fps videos.
