Sieg Xeon Mini-ITX build 2016: With potential upgrades on the way

What is your intended use for this build? The more details the better.

1- Gaming rig that can play DOOM, Killer Instinct and Quantum Break at normal 1080p. 2- Handbrake encoding factory. 720p+ matroska (.mkv) videos into 720P mp4 videos at a conversion rate of 200fps or more. 3- Archive for personal media.

If gaming, what kind of performance are you looking for? (Screen resolution, FPS, game settings)

Normal settings at 1080p resolution. Mild to good anti-aliasing?

Considering my choice of GPU:

Killer Instinct: around 90+ fps (Similarly or better as Xbox One's operation of said game) DOOM: 50+ fps. Quantum Break: 50-60fps.

What is your budget (ballpark is okay)?

The PC has been built for $815 with Windows 10. I'd like to upgrade my PC for $600 more ($250 for new hard drives and $350 for a new videocard). I currently own a Groupon-bought Newegg $50 gift card and I intend to use it for the GPU purchase.

In what country are you purchasing your parts?

Provide any additional details you wish below.

1- Which is the better GTX 970 card: EVGA's FTW+, ASUS' Strix or MSI's 100ME? I prefer cooler-type video cards than reference cards themselves. So far, MSI's selected, but I need more input.

2- I intend to fill all the hard drive caddies in the long run with another SSD and another 3.5" Hard drive, but my ASUS motherboard can only go for three more hard drive connections since one connection is already connected to an optical drive. Do I need a SATA-splitter to finish this one?

And with the Xeon chip, I always hear that when it comes to gaming, the I7 will kick its ass because it has faster cores while the Xeon's cores are slow. How slow are we talking and will it affect my gaming experience????

This upgrade will start at the end of April. I am done waiting. I WILL PLAY DOOM. And Pascal?? Well Pascal can go eat Lex Steele's One-Eyed Snake.
