Channels not showing up in 1080p/4K?

Sorry for any confusion in advance, hopefully I can try and make this make sense. I am not a resolution guru by any means. Please if I am mislabeling or seem to have a misunderstanding of something, correct me.

I currently have a Samsung UN65MU8000FXZA 65” TV. I have xfinity service and just recently upgraded to the new AR AX014ANM cable box that was recommended to me by Comcast because I was told that it supports 4K. I am not entirely even sure what this means but hey, they told me it would be better quality so I went with it.

I’ve noticed that my quality isn’t as good as I think it could be. Some channels in particular are still slightly blurry at times (Mostly notable is ESPN which I am pretty sure definitely supports 1080 or 4K resolution).

I’ve noticed that when I hit the menu button on my Samsung TV remote that it says 1280x720. It doesn’t matter what channel I am watching, it shows this setting. Also when I try to do this on my Xbox One X, the remote just acts as a controller so I have no idea if it is actually playing 1080, 4K, etc... I would assume my Xbox is playing 4K because everything seems so clear but I could be wrong. My Xbox One X is set to my HDMI1 and my cable is set to HDMI2.

I know certain channels are not 1080 or 4K supported but I’ve noticed that quality is still lacking on certain channels and am not too sure what I am doing wrong here. I have an Xbox One X and I do not know how to check it either. Is it my TV that has a setting set to 720 or is it something through my xfinity box. I’ve tried searching online but nothing didn’t seem to help. Any help would be appreciated. Thanks.
