Poor quality when playing through Xbox 360

I've been noticing that the video quality of files played through the Plex app is significantly lower than it should be. For instance, I just connected my computer via hdmi to the same 720p tv I have my 360 hooked up to. I selected the same movie on both devices (playing through VLC on my laptop) and synced them up to play at the same time. I went back and forth by changing the source on the tv and found the xbox's quality to be significantly lower than my computer. This is really disheartening because the whole point of using Plex is to do away with having to connect my computer to the tv.

I noticed that in the optimization settings on the web app there is no option for the Xbox 360 - only Xbox One. Does anyone know of any optimization/transcoding trick to improve my performance?

Both my computer and 360 are on the LAN network, so this is not an issue of poor connectivity over wifi. Every other streaming app looks excellent on the 360.
